Yummy Pumpkin Pie
Pumpkin Pie
According to historical accounts, pumpkin pie originated when the colonists settled here in the Americas. Native Americans had long been using pumpkins for cooking and various other things, however pumpkin pie was created when the colonists cut the top off the pumpkin, took the seeds out, and filled it with milk and spices and cooked it in hot ashes. Pumpkin pie has since then been a delicious pie often associated with holiday activity. It is a delicious piece of Americana that is amazing topped with whipped cream (plain or spiced).

Ingredients
- 2 cups pumpkin, fresh or pie filling variety
- 4 large eggs
- 1 cup white sugar
- 1/2 cup + 2 tbsp brown sugar
- 1/2 stick butter or margarine, melted
- 1 tbsp self-rising flour
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp allspice
- 1 cup evaporated milk
- 1/2 cup chopped pecans
- 1 tbsp butter
- 1 1/2 tsp orange zest (grated peel)
- 2 8 inch frozen pie shells
Directions
- Beat sugar (reserve 2 tbsp brown sugar for topping), flour, spices and eggs until they are light and fluffy.
- Then add butter (reserve 1 tbsp for topping), pumpkin, vanilla, and milk and mix well.
- Pour this mixture into two unbaked pie shells (8 inch size).
- Bake the pies for 10 minutes at 400 degrees. Reduce the heat to 350 degrees and cook an additional 40 minutes.
- Use a small bowl and combine reserved brown sugar, reserved butter, pecans, and orange zest. Spoon this on the top of the pies when only 10 minutes of cook time remains.
