Sweet Onion Taste In a Spread
Being from Georgia, Vidalia onions are one of my favorite cooking ingredients. Vidalia onions are a variety of sweet onions. They are grown in and around Vidalia, Georgia. To be considered a true Vidalia onion, they must be grown within a 50 mile radius of Vidalia. These onions originated around the 1930's, during the Great Depression era when farmers in Georgia were trying to find a new cash crop to grow in the sandy soil of south Georgia. They tried to revive everything from corn to cotton. Instead, they found the soil perfect for growing a variety of onion that was sweet instead of hot like most varieties. These onions are famous world wide now. They make a delicious addition to any recipe that calls for onions. They are also delicious served alone. Vidalia onions are now used for cooking, salad dressings, salads, dips, and raw and anything in between. I've tried other sweet varieties of onions but none take the place of those grown here in Georgia. If you have never tried them, I suggest you do. There is nothing like 'em.
This dip is a delicious way to serve up Vidalia onions. It is simple, requires few ingredients, doesn't require a lot of time or effort to make, and is just plain delicious. Give it a try served up with crackers.

Ingredients
- 2 cups Vidalia Onions, chopped
- 2 cups extra sharp cheddar cheese, shredded
- 2 cups mayonnaise, (not salad dressing)
- to taste paprika
Directions
- In a large bowl, mix all the ingredients except the paprika. Blend together well.
- Preheat the oven to 375 degrees.
- Pour the onion mixture into a deep dish pie plate or small casserole dish. Cover the mixture with paprika to taste (generous amount).
- Bake for 35-40 minutes until bubbly and browned.
- Cool for about 3 - 4 minutes and then serve warm with crackers. Enjoy! This spread can be made ahead and stored in the refrigerator & re-warmed in the microwave.
