Stewed Tomatoes
One of Mother Nature's best summer time gifts (in my opinion) is tomatoes. You just can't beat them as far as I'm concerned. They are highly versatile and can be made into sauces that are absolutely amazing. They can be used in soups and stews. They are also great in various salads. The tomato is so tasty it makes a great side item all on its own, whether stewed up, fried, or just sliced with salt and pepper. This recipe for tomatoes tastes wonderful and is great as a topper for "southern" vegetables like greens and black eyed peas, or lima beans. But it also goes great on rice or all by itself. This recipe makes a good bit but can be frozen for future use. Make a good addition to vegetable soup or chili.

Ingredients
- 1 gallon tomatoes, peeled and chopped
- 1 large onion, chopped
- 1 large bellpepper, chopped
- 3 jalepeno peppers, chopped
- 3 lbs white sugar
Directions
- Put tomatoes, onion, and peppers in a large pot and cook on medium heat for 30 minutes.
- Add the sugar and cook until the consistency of preserves.
- Serve with rice, veggies, and/or cornbread.
