Stuffed Jalapeno Peppers
A jalapeno pepper is a medium sized chili pepper. They are typically eaten while still green but sometimes they are allowed to ripen to a crimson red color before eaten. These little beauties are both delicious and nutricious. They are spicy but not overbearingly hot. This recipe includes cream cheese, sharp cheddar cheese, and bacon. The blend of flavors is incredible. Stuffed jalapenos make a great party food, appetizer, or side item.

- 10 jalapenos, stems removed, cut in half, & seeds removed
- 1 8 oz tub whipped cream cheese
- 1 8 oz bag sharp cheddar cheese, shredded
- 1 pack bacon, cut strips in half
Directions
- Cut the stem off each jalapeno pepper. Split each pepper in half lengthwise. Remove the seeds from the peppers.
- Put 1 to 2 tbsp of cream cheese in each pepper. (Depending upon the size of the pepper.)
- Top each pepper with 1 tsp of shredded cheese.
- Wrap each pepper in half a slice of bacon. Secure with tooth picks if necessary.
- Bake at 400 degrees on a flat sheet for about 20 minutes or until bacon is done.
- For variation, mix dry ranch dip into cream cheese before filling the peppers.
