Shrimp and Grits
When you grow up southern, and someone asks you what goes the best with shrimp, you're natural response will most likely be "grits". I adore the amazing flavor combinations of low country cuisine (see my low country boil recipe too if you haven't). They incorporate seafood which I adore with spicy and delicious flavors in a way that makes you smile all over.
Try this tasty southern dish and you will be hooked. It is amazing.
Cook Time
Ingredients
- 1 tbsp olive oil, can use canola or vegetable
- 4 oz country ham
- 1 8 oz pack fresh mushrooms, sliced
- 1/2 tsp seasoning salt
- 1/2 tsp thyme
- 1/2 cup green onions (scallions), thinly sliced
- 2 tsp garlic, minced jar kind
- 1 cup strong coffee
- 1/4 cup sherry, cooking kind okay
- 1 tbsp corn startch
- 2 tsp hot sauce
- 1 lb shrimp, peeled, deveined
- 1 8 oz bag sharp cheddar cheese, shredded
Directions
- Brown ham in the olive oil. Add mushrooms, seasoning salt, and thyme. Cook for 3 - 5 minutes.
- Add the green onions and garlic. Saute for 3-5 minutes.
- Add coffee, cornstarch, sherry, and hot sauce. Heat to a simmer over medium-low.
- Add shrimp and cook until pink.
- Cook grits according to package directions.
- Put grits into a bowl and cover with shrimp mixture. Also cover with cheese shreds. Enjoy!
