Salmon Cheese Log
A Different but Delicious Appetizer
I know that I come across cheese balls or logs at almost every party I ever attend. So many of them include cheese and fruit or cheese and meat combinations. This one includes a tasty combination of cream cheese and salmon. Salmon is a super nutricious food and it is in my opinion one of the tastiest fish there is. This recipe incorporates cream cheese, salmon, horseradish, onion, and lemon juice with the taste of liquid smoke. The cheese log is rolled in parsley and pecans. It is delicious served on crackers, melba toast, or crustini bread.

Ingredients
- 2 cups or one can pink salmon
- 8 oz cream cheese, softened
- 1 tbsp lemon juice
- 2 cups onion, grated
- 1 tsp prepared horseradish
- 1/4 tsp salt
- 1/4 tsp liquid smoke
- 1/2 cup pecans, chopped
- 3 tbsp parsley, snipped
Instructions
- Drain and flake salmon. Be sure to remove all bones and skin.
- Combine the cream cheese, lemon juice, onion, horseradish, salt, and liquid smoke. Combine with salmon and chill for several hours.
- Combine pecans and parsley.
- Shape salmon mixture into a log shape (approximately 8x2) and roll in the nut mixture.
- Chill well and serve with crackers, melba toast, or crustini bread.
