Papa Bud's Corn on the Cob
A week or so ago I ate some of the best corn on the cob to ever grace my mouth. My in-laws invited us to supper and my father-in-law cooked corn on the cob, ribs, and potato salad. Not that everything wasn't delicious, but that corn made a lasting impression so I asked for his recipe. If I hadn't tasted it first, I'm not sure I would have believed that this cooking technique would work so well but it is absolutely perfect. Fresh corn is abundant during the summer, so I really suggest you try this tasty recipe. Something about the cooking method brings out the natural sweetness plus makes the kernels come off the cob easily. Each kernel is juicy and tender -- melt in your mouth good.
Papa Bud's Corn on the Cob
Cook Time
Ingredients
- 4 ears corn on the cob, fresh still in the husk (green peel)
- 1 stick butter or margarine
- to taste salt
- to taste pepper
- 1/2 tsp seasoning salt, optional
- 1/2 tsp old bay seasoning, optional
Directions
- Cut the top (1/2 inch) and bottom (stalk) ends of the corn cobs. DO NOT REMOVE the silks or the husks.
- Wrap the corn up in a dish towel altogether.
- Place it in the microwave for 4 minutes PER ear of corn used. (This recipe would cook 16 minutes since it is based on 4 pieces.)
- When it is done, you wrap it in aluminum foil with lots of butter and salt and pepper to taste. Place it in the warm oven or on the grill until ready to eat. Absolutely delicious!
- Variation: Tonight I cooked inside and cooked this corn as part of my supper, I cooked it in the microwave, then I melted the butter with salt, seasoning salt (1/2 tsp), pepper, and old bay (1/2 tsp), then poured it onto a tray and rolled the corn in the butter, since I was ready to serve right then. Soooooo goooood!!!!
