Yummy Variation on Mashed Potatoes
This recipe uses mashed potatoes and various traditional baked potato toppings to make a delicious side dish to accentuate any grilled or baked meat. This casserole has numerous flavors brought together in one great dish. It is a prepare ahead meal idea that sits in the refrigerator overnight to let the savory flavors mix together well.

Ingredients
- 6 medium potatoes, peeled, cooked, and mashed
- 1/2 medium onion, peeled, cooked, and mashed
- 1/2 cup sour cream
- 2 tbsp butter or margarine
- 3/4 cup ranch dressing
- 1 bag real bacon bits
- 1 cup sharp cheddar cheese, shredded
- to taste salt and pepper
Directions
- Boil the potatoes and onions in a large stock pot until soft. Drain and then mash them together.
- Add all other ingredients EXCEPT cheddar cheese. Salt and Pepper to taste.
- Pour the mixture into a greased casserole dish and place in the refrigerator overnight.
- The next day, bake the casserole at 325 degrees for about 45 minutes. Remove casserole from the oven and cover with shredded cheddar cheese while still hot. To make more melty, put back in the oven for about 3 minutes.
- This makes an incredibly tasty side dish. Enjoy!
