Lime Congealed Salad
I love congealed salad. I always have. You will see a recurring theme, I love lime anything. :) This fruity salad is light but filling and is an excellent dessert, snack, or even breakfast. It combines cottage cheese, sugar free lime jello, mandarin oranges, and crushed pineapple. I also add a few chopped pecans or walnuts. All in all, this is a pretty healthy dessert.

Ingredients
- 1 16oz cottage cheese, lowfat
- 2 3 oz packs sugarfree lime jello
- 1 small can/jar (10-12 oz) mandarin oranges, drained
- 1 20 oz can pineapple, crushed
- 1 6 oz jar marishcino cherries, drained, stems removed
- to taste pecans or walnuts, crushed (optional)
Lime Congealed Salad
- In a medium mixing bowl, add the cottage cheese and the 2 packs of gelatin. Stir well.
- Add the drained mandarin oranges, cherries, and pineapple. (Add nuts here too if you wish.)
- Mix together well. Chill and enjoy!
