Fruity Chicken Salad
This chicken salad combine freshly cooked chicken breasts with vegetables and fruit for a chunky and filling salad that can be served so many ways. It is an excellent salad to use for parties or showers served with crackers or in scooped out baby tomatoes. It is also good as a meal served in a medium sized scooped out tomato (tomato cup) or bell pepper, or simply on a bed of lettuce or as a sandwich filler.

Ingredients
- 3-4 chicken breasts, skinless & boneless, shredded or diced
- 3/4 cup celery, diced small
- 3 tbsp lemon juice
- 1 cups seedless grapes
- 1 1/4 cups salad dressing or mayonnaise
- 1 cup sweet onion, diced finely
- 2 1/2 cups apples, leave peel, diced small
- 1/2 cup walnuts, chopped (could use pecans)
- 1 tbsp seasoning salt
- to taste salt and pepper
Directions
- Boil chicken in water with seasoning salt. Cook until no longer pink in the middle. Remove from heat, drain, and let chicken cool. Shred or dice. (I like shredded meat.)
- Chop up celery, onions, and apples. Cut grapes in half.
- Put chicken, vegetables, and fruit in a large mixing bowl. Add the salad dressing and the nuts and lemon juice to the bowl. Add salt and pepper to taste. Chill. Serve on a bed of lettuce, a tomato cup, or in a sandwich. So delicious.
