Pork Chop Casserole
This casserole includes pork chops, rice, tomatoes, and soup mixes to add delicious flavor to a hearty one dish meal. It can be served alone or with additional vegetables. This casserole can be cooked as the recipe states, or you can tweak the spices for a slightly different taste. I sometimes throw in a can of cream of chicken mushroom soup for a little more gravy. This is a very easy and very tasty family meal.

Ingredients
- 4-5 pork chops, 1 inch thick
- 2 tbsp canola or vegetable oil
- 1 1/2 cups regular rice, uncooked
- 1 16oz can tomato wedges, undrained
- 1 10.5 oz can beef consomme
- 1 1 3/8 oz envelope onion soup mix, dry
- 1 tsp thyme, dried
- 1 tsp oregano, dried
- to taste salt & pepper
Directions
- Brown pork chops in the oil in a skillet.
- Grease a shallow 2 qt. casserole dish. Add the rice.
- Place pork chops on top of the rice.
- In a large bowl combine tomatoes, consomme, onion soup mix, and spices. Pour this mixture over pork chops and rice.
- Cover with aluminum foil and bake for 1 hour and 15 minutes at 350 degrees. Enjoy!
