Delicious Steak Marinade
Why Marinate?
Marinade is a liquid used to soak meat for various increments of time. It is used primarily for two reasons. First of all, marinade is used to produce meat that is flavorful and tasty. Secondly, marinade serves to tenderize the meat and add moisture. Typically good marinades consist of acids, a series of spices, and oils. Marinade times vary by type of meat and marinade used. Fish and chicken usually benefit from marinade after 30 minutes, where beef and pork may take longer. It is suggested that you either cut meat into strips or puncture the meat with a fork prior to marinating to help it soak in better. There are two types of marinades. The first one is a dry marinade which predominantly uses salts and seasonings to "rub" on the meat. The salt breaks down the proteins to enhance flavor and tenderize. The other type of marinade is a wet marinade which consists of acids, spices, and oils. The acids serve the same purpose as the salt. This recipe is a wet marinade suggested for steaks. It would also be good on chicken and fish.

Ingredients
- 1 cup orange marmalade
- 1/2 cup lemon juice, (bottled is ok)
- 1/2 cup worcestershire sauce
Directions
- Mix all ingredients together in a jar or bowl with a lid. Shake them all up together well.
- Put steaks in a large ziploc bag or a large casserole dish and cover with marinade. Let them set for 30 minutes or longer.
- Grill the steaks inside or outside.
