A Delicious Pecan Pie with Chocolate & Bourbon
This pecan pie is a yummy combination of pecans, bourbon, and chocolate. It takes the meaning of pecan pie to a whole different level. This pie is cooked in a pastry crust until set. It is then eaten with vanilla ice cream for a glimpse of heaven here on Earth.
These pies are thought to have originated around Louisville Kentucky and are sometimes called Kentucky Horse Race Pie or Kentucky Derby Pie. This type of pie has been served at the horse race track for years. Try it, I am sure you will feel like a winner because this pie is slap your mama good!
Cook Time
Ingredients
- 2 large eggs, slightly beaten
- 1 cup white sugar
- 1/2 cup butter or margarine, melted
- 1/4 cup Kentucky bourbon whiskey
- 1/4 cup corn starch
- 1 cup pecans, chopped
- 1 cup semi-sweet chocolate chips
- 1 tbsp vanilla extract
- 1 frozen pastry pie crust
Directions
- In a medium bowl, combine eggs, sugar, melted butter, vanilla, & bourbon.
- Add the corn starch a little at a time, blending slowly.
- Stir in the pecans and the chocolate chips.
- Pour this mixture into a 9 inch frozen pie shell.
- Preheat oven to 350 degrees. When oven reaches this temperature, bake for 45 minutes. (Cover edges of pie crust with aluminum foil to prevent burning if you want.)
- Serve warm (not hot) with vanilla ice cream and/or whipped cream on top. So very delicious!!!
